Rwanda has a rich history of and present day production of coffee. We have found a drink and we are crazy about it! King Faisal hospital has a new coffee cafe and our staff have enjoyed this delicious pick-me-up. There are numerous add-ins to the coffee but ginger is the constant while other spices or chocolate may be added. Here's an approximate recipe.
1 shot espresso
1-2 teaspoons grated ginger (yes, it is spicy)
1/4 teaspoon ground cardamon (optional)
1/8 teaspoon ground cinnamon (optional)
1 Tablespoon drinking chocolate (optional)
1/4-1/2 Cup milk, heated or steamed
1-2 teaspoons grated ginger (yes, it is spicy)

1/4-1/2 Cup milk, heated or steamed
Add the freshly grated ginger, spices (if using) and/or chocolate to the hot milk. Let sit 2 minutes.
Add the hot coffee to the above mixture and stir. Strain into a mug or cup or chill it and try it cold!
